HYDROXYTYROSOL & THE DESERT
Naturally rich in Polyphenols, particularly Hydroxytyrosol
Because of the harsh environment of the desert (127°F during summer, rocky soil, roots cannot develop easily, lack of water), the olive trees are so stressed that a phenomenon of panic (survival instinct) occurs. This causes the olive trees to produce a huge quantity of polyphenols (antioxidants) to survive. The resulting olive oil contains an extraordinary hydroxytyrosol value.
